Grinding and full removal are different jobs.
Grinding reduces the stump below the surrounding surface; it does not necessarily remove the entire root system. Excavating the stump and roots can involve a larger disturbance. Tell the contractor if you plan to plant, pave, build or regrade so the proposed depth and finish can be discussed.
Before work that disturbs the ground, establish how buried utilities and privately installed services will be identified.

Discuss your planting plan with the contractor. Remaining roots, chips and soil condition can affect where and how a replacement tree is planted.
Is the ground ready for a patio afterward?
Do not assume grinding alone provides a construction-ready base. Ask the relevant contractor about roots, settlement, excavation and preparation for the intended surface.
